Sensory analysis and shelf life, tools for acquiring certification in accordance with the GFSI schemes With the shelf life or best before date, there is normally a request to the Quality Control Department for “EXTENDED SHELF LIFE”, in other words to know whether microbiological, physiochemical and sensory variables determining the deterioration or decomposition of the food have been evaluated (note, the food item must be free of pathogens or toxins), and, therefore, to establish the food's shelf life, allowing legal requirements to be fulfilled, customer satisfaction and product quality.
